Edge ProProfessional Kit 1 Knife Sharpener System

Im going to be very critical and picky due to the price point on this sharpener. I feel its fairly expensive for your average joe. unless you do this for a living or it saves you money from sending out your personal knives to be sharpened. It is not fool proof. It takes some getting used to and practice. It is not idiot proof which sums up my sharpening abilities. Im extremely handy but sharpening knives is not me. But having a sharp knife is a must to me. My most important tip is attention to the burr. They are extremely fine in my case and dragging or stropping it against a paper towel has been my most effective way to identify it when i start to feel snags. The second is thinning the blade as they show in tips videos on YouTube. Odds of your blade being in perfect sync with the sharpener edge it will create is slim at the first shot. Once again they warn you of all this in the videos. Lastly i stress as they do, different steel sharpening differently. Some take a while, some are brittle. I recommend keeping notes on how your knives sharpen and take a edge along with presets to get a rough start.The pros, it works with practice. I feel this is a finishing system where polish is easily achieved. Once its dialed in i believe you will have a long lasting edge with light use. Vacuum base is solid when set up properlyThe cons, i feel even with the most coarse Stone it is hard to get out knicks and dings or previously bad sharpening profiles. Hence why i say this is a maintenance or finishing sharpener. It can be achieved but will take some time to rework bad cases. Having to hold amd secure the knife by hand is one of the difficulties and things that take practice and feel to learn. The build quality is ok but certainly would prefer to bolt down to a base. Its a good product. Just know that it isnt a guaranteed success to start out.

Phenomenal sharpener. Completely met my expectations. I originally was going to get the regular Apex sharpener but decided to get the Pro and I'm happy that I did. It's clear when you take the case out of the box that this is a quality product. Open up the hard case (it's big) and you see a very heavy duty quality made sharpener. Up to this point I'd had to jury rig ways to sharpen my Emerson chisel grind knives but this makes it easy to achieve a good bevel on them. Makes fast and easy work of kitchen knives, fishing knives, and sport knives. Highly recommended even if expensive. I'm a fanatic about certain things and my knives are one of them...worth every penny to me.
